Ingredients
- Eggs & Dairy: 8 large eggs 1/4 cup whole milk 1 cup shredded cheddar cheese
- Meats: 8 oz (225 g) breakfast sausage (pork or turkey) casing removed
- Vegetables: 1 medium red bell pepper diced 1 small yellow onion diced 1 cup baby spinach chopped
- Tortillas: 6 large (10-inch) flour tortillas
- Pantry & Spices: 1 tbsp olive oil 1/2 tsp salt 1/4 tsp black pepper 1/2 tsp chili powder (optional)
Instructions
- Step 1:
- In a large skillet over medium heat add olive oil Sauté onion and bell pepper for 3–4 minutes until softened.
- Step 2:
- Add sausage and cook breaking it up until browned and cooked through about 5–6 minutes. Drain excess fat if needed.
- Step 3:
- Stir in chopped spinach and cook for 1 minute until wilted. Transfer mixture to a bowl and set aside.
- Step 4:
- In a mixing bowl whisk eggs milk salt pepper and chili powder (if using).
- Step 5:
- Pour eggs into the same skillet and scramble gently over medium-low heat until just set but still soft. Remove from heat.
- Step 6:
- Warm tortillas in the microwave for 20 seconds to make them pliable.
- Step 7:
- Assemble the burritos On each tortilla layer egg mixture sausage and veggies and sprinkle with cheese.
- Step 8:
- Fold in the sides and roll up tightly.
- Step 9:
- To freeze Wrap each burrito tightly in foil or parchment paper then place in a freezer bag.
- Step 10:
- To reheat Microwave unwrapped burrito for 1–2 minutes or bake in a 350°F (175°C) oven for 20 minutes from frozen.
